The faster 800: Crushed berry layer dessert
Gloriously creamy and deceptively simple. On non-fast days, use half crème fraîche and half yoghurt to make it even creamier.

400g berries (eg hulled strawberries, blackberries, raspberries, blueberries – defrosted frozen berries are fine to use)
1 tbsp chia seeds
400g full-fat Greek yoghurt
1 tsp vanilla extract
2 tbsp flaked almonds, toasted (around 15g)
- Tip the berries into a bowl, reserving some for decoration. Mash lightly, stir in the chia seeds and leave to stand for 20 minutes.
- Combine the yoghurt and vanilla extract in a separate bowl.
- Layer the fruit and yoghurt into four glass tumblers. Decorate with the reserved fruit and top with flaked almonds.
COOK’S TIP
If not eating straight away, cover and keep in the fridge. Top with flaked almonds before serving. Eat within a couple of days.
