How to feed an AFL squad: MasterChef star Courtney Roulston reveals the delicious and healthy meals she cooks as Team Chef for the Sydney Swans

MasterChef’s Courtney Roulston has gone from strength to strength since first taking part in the cooking competition in 2010.

And after her elimination from MasterChef: Back to Win on Tuesday, the 40-year-old chef has revealed some of the dishes she serves on a professional basis.

Courtney, 40, landed a catering job with the Sydney Swans AFL team after her first stint on MasterChef back in season two.

She told Hit Mid North Coast’s Krysti and Bodge on Wednesday that she serves the tram buffet lunch that is high in carbohydrates before games.

‘It’s not always pasta,’ she said. ‘We’ve got a lot of boys living in Bondi so we’ve got to have some hipster food thrown into the menu.’

She said they incorporate ingredients like quinoa, chia seeds and kale to suit the players’ refined tastes.

Courtney likes to cook meals from different cuisines to give the boys variety, saying: ‘I’ll do an Indian lunch one day, and they’ll have Japanese, or Mexican on other days.’

‘They’re very spoilt, they get a hot buffet lunch with about three or four vegetable dishes, two proteins, a soup and a dessert and bread,’ she added. 

In the past, the Swans’ Team Chef has shown her Instagram followers the kinds of meals she makes for the players, including celery, green chilli and tahini tabbouleh, and chilli-caramel roast butternut pumpkin. 

‘It’s a good job, they love to eat and I love to cook so it’s a good relationship we’ve got,’ Courtney told the radio hosts.

Courtney was eliminated from MasterChef: Back to Win on Tuesday’s episode after she was forced to serve an unfinished kohlrabi dish.

‘I gave it my all today. I’m most proud that I had a crack, I came back. I feel like finale dishes from 10 years ago is what we just cooked today,’ she said afterwards.

‘The competition is tough but it’s the greatest experience you can get.’
